Speaking of slow carbs, here is the recipe we mentioned for Creamy Garlic Califlower!
Ingredients: 1 medium Cauliflower (about four cups of florets), 1 medium onion (minced), 2 cups chicken bouillon (or veggie option), 2 garlic cloves (minced), 2 teaspoons butter, 1/4 cup sour cream, 1/4 cup heavy cream, 1 tablespoon chopped fresh chives or parsley
*wash cauliflower and cut into small florets *bring chicken bouillon to a boil in a large saucepan and add cauliflower, simmer until soft (about 15 minutes) *while cauliflower is simmering, saute onion and garlic in 1 teaspoon of butter in a small saucepan over medium heat, cook until soft (about 3-4 minutes) *drain cauliflower when soft, add cauliflower, onion and garlic as well as sour cream, heavy cream and an additional teaspoon of butter to a food processor and process until smooth: you may have to process in batches, depending on the size of your processor *at this point, the cauliflower may be refridgerated or frozen until ready to use: if using immediately, reheat gently in original saucepan *serve sprinkled with chopped chives or parsley *makes 6 servings
